you said we should ignore waswas even if we are 100% How can I differentiate between what to ignore and what not? Once I forgot the second surah I was sure because I was going to ruku straight after the Fatihabut when this happens with other things Istill ignore it even100% sure like with Fatiha

The other surah after the fatah is favored and if u do not recite it, it is okay and you do not need the prostration of forgetfulness for that.
