For a while now I haven’t seen any poor Muslim person who I can give my zakat ul fitr to. Would it be permissible for me to send the money to an organization who would give food to people in need like the people of Gaza? All the people around me give zakat ul fitr in cash so I’m not sure what to do.

If there are Muslims in your country, give to them. And yes it is allowed to give someone trustworthy money to buy food for the poor in your land. If there are no poor people then yes you can pay through the official trustworthy channels that will give the zakat on your behalf.
