Assalam o alaikum when I’m shocked I used to say oh my gosh so can I say things like jeez Louise instead or oh my days when something shocking happens to me ?

Leave these as well, because jeez is taken from the name Jesus and saying it is forbidden, and the rest are imitating the speech of the kuffar. Say subhan Allah or Allahu akbar instead, as these are what is said in the Sunnah when surprised as the Prophet used to do so.
