Assalamualaikum wa rahmatullah I know there isn't any specific detail of how the socks should be (except above the ankle) in order to wipe over them but socks that intentionally have small holes/open spaces in the knitted fabric, rather than being torn, probably to improve airflow, can we wipe?

Don't fall into Waswas. These small holes change nothing. The Sahaba, when they wore their footwear, as scholars have mentioned, they were not free of holes, and they still wiped on them.
