Some sisters have taken the habit to say As salam 'aleyki, saying 'aleykom isn't technically/linguistically correct. What is more correct and upon the Sunnah? Why is the plural form used here?

Plural is used for the plural, singular for the singular, and we shouldn't really be concerned about this at all.
