As salamu alaykum, Ahsan Allahu ilaykum. I recently saw that AI has been used to understand and translate what animals are saying. I remembered there is a Hadith that speaks about animals speaking at the end of times. Would this fall under the hadith or no?

No, the hadith is about the beasts themselves speaking to man, real speech and a breaking of the natural order, and that has not occurred yet. A machine that analyses animal sounds is not the animal speaking.
