Assalaamu Alaykum Wa Rahmatullaah Wa Barakaatuh, AhsanAllahu ilaykum. What is your advice for muslims who always choose the strictest view (in matters upon which the scholars differ) thinking that this is best or safest to do so? Is this good to do or is it making the religion hard upon oneself?

No this is a mistake, you always follow the evidence and when the evidences are equal to you and you do not know which view to follow then follow the view of the scholar whom you trust most in terms of his piety and knowledge.
