Mom and I follow the opinion that cheese enzymes/rennet have to be from halal slaughtered animal but most people here do not follow that opinion. If we go out to eat we avoid or ask where they get their cheese from.Is this digging too deep?If yes then should I eat cheese from anyplace that says halal

Yes, this is digging too deep, the default in food is permissibility and you are not required to ask about the source of the rennet. Rennet taken from an animal not slaughtered the Islamic way is itself a point on which the scholars differ, so what is sold as halal may be eaten unless you know for certain that something forbidden is in it.
