As-salamu alaykum, im a 21 year old revert who lives with his catholic parents and are agaisnt early marriage such as my age. Should i still get marrried even if it means barely seeing the spouse like once a week? This would mean to hide my marriage to my parents.

Yes, you can get married. You should get a job, move out, and live with your wife. I don't understand why you put yourself in a situation where you are not able to do this and can only see her once a week. If you don't have the means right now, then get focused. Work on yourself and develop yourself for a year or so. Be in charge, take responsibility, and do your best in order to get, bi-idhnillah (by the will of Allah), incredible results. That way, you can get married ASAP and actually afford to open a household, support a family, and cover the expenses.
