I rarely have to interact with women at my university. I'm considering an semester internship in a muslim country but the person that handles this stuff is a woman. I would need to ask her and I assume communicate a lot with her throughout the semester. Is it better for me to avoid this?

I do not understand the nature of the interaction, such as whether it is continuous on the phone, getting a private number, and so on. However, if you mean that you are going with no khulwah—for example, to hand in papers, complete the necessary documentation, and handle the back and forth—then this is allowed, insha'Allah. It is just like being in a hospital where you might need a lot of interaction over a long period of time; that is still not a problem.
