Assalamu alaykum ustadh. I hope you’re well. Please clarify this for me sheikh. Is it permissible to tell a vegan atheist that you respect him alot more than an atheist because they’re atleast a bit more consistent? Though this may encourage him to uphold veganism

Yes, you can say that to them. They respect so-and-so more than others and, Insha'Allah, it's a door to calling them. That is their personal preference. I don't want to eat meat, but of course, this is not something that is evil.
