السَّلاَمُ عَلَيْكُمْ وَرَحْمَةُ اللهِ وَبَرَكَاتُهُ أحسن الله إليك Shaykh is it haram to say “bye”

No, but say السلام عليكم ورحمة الله وبركاته In the end just like u said in the beginning this is the sunnah.
