Asalamu Alaykum Ustadh, I have issues with wudu. Can I choose to combine salah when I can keep wudu vs make 1 wudu for each prayer time and allow broken wudu, or should I choose one ruling over the other?

If you have incontinence, then you must make wudhu after the time for prayer enters and then you go and pray and there is nothing on you even if you break your wudhu because of incontinence.
