Ustadh, if there are multiple Ayat/Ahadeeth for 1 subject how many should we memorize ? Is it sufficient to memorize 1-3 Ayat and 2-3 Ahadeeth per subject and then to move to the next area/lesson ?

You can memorize 1 for each even if it was just 1 ayah or hadeeth, increasing the number is good so no problem with that in sha'a Allah.
