Ustadh, my father doesn’t like when I have a conflict with my sister but sometimes they are openly disrespectful to him. Is defending him considered disobedience since he dislikes it and if so how do I honor him from the disrespect.

Obey him in what he's commanding you and let him handle it. He can discipline them. If he doesn't, that's on him, not on you.
